MY 2 FAV CHICKEN RECIPES
Publix & Campbell's put out some pretty tasty recipes. Two, of which, have landed in my permanent rotation for family dinners. I thought I'd shared these with you cuz they're affordable, fairly healthy, totally tasty and dummy-proof!
CHICKEN DIVAN: 2 tbsp's flour; tsp of seasoned salt; large zip-loc bag; 1.5 lbs boneless skinless chicken breasts; 1 tbsp lowfat butter; 3 cups frozen broccoli florets; 8 oz of LIGHT Alfredo sauce (Bertolli makes one in the 'fridge section at grocer); 1/4 cup cooking wine; shredded Parmesan cheese
1) Place flour & seasoned salt in large zip-lob bag. Cut chicken into bite-size chunks & place in bag. 2) Preheat large saute pan on med-high 2-3 mins. Seal bag & shake to coat chicken. Add butter to pan & swirl to coat. Pour chicken w/ flour, into pan & cook 4-5 mind, stirring occasionally until chicken BEGINS to brown. 3) Add broccoli to pan. Cover & cook 3 mins, stirring occasionally. Turn heat to low. Stir in Alfredo sauce & wine. Cover & simmer 2-3 mins until broccoli is tender. Serve w/ parm cheese. YUM-O!!!!
SOUTHWEST WHITE CHICKEN CHILI: 1 tbsp canola oil; 4 skinless, boneless chicken breasts, cut into cubes; 4 tsp chili powder; 2 tsp ground cumin; 1 large onion, chopped; 1 med green pepper, chopped (about 3/4 cup); 1 can 98% fat free crm of chicken soup; 3/4 cup water; 1.5 cups frozen whole kernel corn; 2 cans white kidney beans (cannellini) rinsed & drained; 2 tbsp lowfat shredded Cheddar cheese
1) Heat oil in 4-qt saucepan over med-high heat. Add chicken, chili powder, cumin, onion & pepper & cook until chicken is cooked thru & veggies are tender, stirring often. 2) Stir soup, water, corn & beans in saucepan & heat to boil. Reduce heat to low. Cover & cook 5 min, stirring occasionally. Sprinkle w/ cheese. YUM-O!!!!
